Preparation time: 10 minutes
Cooking time: 12-15 minutes
Serves: 4-6
- 175 g of button mushrooms, finely chopped
- 200 g of Spam, finely chopped
- 2 tablespoons of freshly grated Parmesan cheese
- 1 tablespoon of finely chopped parsley
- 1 egg, beaten
- 150 ml of single cream (1/2 cup of light cream)
- 1 tablespoon of chopped lemon grass (optional)
- salt and pepper
- flat leaf parsley, to garnish
Start by greasing 4-6 individual ovenproof souffle dishes. Combine all ingredients in a bowl and spoon this mixture into the prepared dishes.
Bake in an oven that has been pre-heated to 200 degrees C/ 400 degrees F/Gas Mark 6 for 12 minutes or until the mixture is just firm. Finish by garnishing with parsley and serve.
For an extra touch, you can sprinkle Parmesan cheese over each dish for the last 2 minutes of baking. There are numerous variations available; for instance, cracking an egg over each dish before placing them in the oven is an option.
Additionally, including chopped sausage can also enhance the dish.
