Preparation time: 10 minutes
Cooking time: 12-15 minutes
175 g of button mushrooms, finely chopped
200 g of Spam, finely chopped
2 tablespoons of freshly grated Parmesan cheese
1 tablespoon of finely chopped parsley
1 egg, beaten
150 ml of single cream (1/2 cup of light cream)
1 tablespoon of chopped lemon grass (optional)
salt and pepper
flat leaf parsley, to garnish
Grease 4-6 individual ovenproof souffle dishes. Mix together all the ingredients and spoon into the dishes.
Bake in a pre-heated oven, 200 degrees C/ 400 degrees F/Gas Mark 6, for 12 minutes or until just firm, then garnish with parsley and serve.
You can sprinkle Parmesan cheese over the dish for 2 minutes at the end. There are many variations with this. You could even break an egg over each dish when you first put it in the oven.
You could even put chopped sausage in as well.
