Preparation time: 25 minutes, plus standing.
Cooking time: 35 minutes.

You’ll appreciate this already. Just imagine the time you’ll save on Christmas day.
2 large aubergines/eggplants
1/2 tablespoon of olive oil
salt and pepper
Filling:
2 tablespoons of olive oil
2 onions, finely chopped
2 garlic cloves, finely chopped
2 large tomatoes, skinned and chopped
340 g / 12 oz of SPAM
1 teaspoon of paprika
1 tablespoon of chopped coriander
Topping:
4 tablespoons of soft breadcrumbs
4 tablespoons of grated cheddar cheese
Garnish:
tomato slices
coriander sprigs
Slice the aubergines/eggplants in half lengthwise, then carefully run a knife around the edges about 5mm to 1/4 inch from the skins. Sprinkle salt over them and let them sit for 30 minutes. Afterward, drain the liquid, rinse with cold water, and dry thoroughly. Brush the cut surfaces with the 1/2 tablespoon of olive oil.
Place the aubergines in a dish, cover with foil, and bake in a preheated oven at 200 degrees Centigrade/400 degrees Fahrenheit/Gas Mark 6 for 20 minutes. Afterwards, scoop out the soft inner part of the aubergines and mash it.
Meanwhile, in a saucepan, heat the 2 tablespoons of olive oil, add the onions, and sauté for 5 minutes. Next, incorporate the garlic and tomatoes, continuing to cook for another 10 minutes. Finely chop three-quarters of the SPAM and mix it into the saucepan along with the paprika, coriander, aubergine pulp, and salt and pepper to taste. Fill the aubergine shells with the mixture and sprinkle with breadcrumbs and cheese. Place back in the oven for 15 minutes and serve garnished with tomato slices, strips of the remaining SPAM, and coriander sprigs.
